Ingredients:

  • 5, (43 oz.) pouches StarKist® Chunk Light Tuna in Water
  • 50 whole grain pita pockets, cut into quarters
  • 2 ½ #10 cans cups chickpeas
  • 3 ¾ cups greek yogurt, plain, non-fat
  • 3 ¾ cups mayonnaise
  • 2 ½ cups pickle relish
  • 1 ½ cups lemon juice
  • 4 tsp. granulated garlic
  • 1 2⁄3 cup salt free Mediterranean spice blend
  • 5 cups celery, ¼ inch diced
  • 1 ¾ cup parsley, chopped
  • 1 ¾ cup red onion, ¼ inch diced
  • 25 qts. shredded romaine lettuce

Directions:

  • Thaw pita bread at room temperature.
  • Drain and rinse chickpeas in a colander.
  • Transfer beans to a large bowl. Using a potato masher, smash until almost no whole beans remain.
  • In a separate bowl, combine Greek yogurt, mayonnaise, pickle relish, lemon juice, salt free Mediterranean spice blend and granulated garlic. Add smashed chickpeas, celery, red onion, and parsley. Then mix in the undrained tuna. Using fresh gloved hands, crumble the tuna into small pieces. Mix gently until all ingredients are combined. CCP: Hold and serve at 41°F or below.
  • Cut pita rounds in half. Place 1 cup shredded lettuce in a container. Using a #8 scoop, add ½ cup packed tuna mixture on the side. Serve with 2 quarters of cut pita bread.
