Ingredients:
- 10, (43 oz.) pouches StarKist® Chunk Light Tuna in Water
- 200, 6-inch corn tortillas
- 5 tsp. (1 ⅔ Tbsp.) chili lime seasoning, low sodium
- 50 oz. shredded romaine lettuce
- 210 oz. (13.125 lbs.) chopped fresh tomatoes
- 3 ¾ oz. fresh cilantro
- 5 lb. avocados, sliced
- Lime Crema:
- 6 ¼ cups light sour cream
- 1 cup lime juice
- 2 tsp. chili powder
- 2 ½ tsp. paprika
- 2 ½ tsp. chili lime seasoning, low sodium
Directions:
- Thaw tortillas at room temperature overnight if needed.
- Pour pouch of undrained tuna into a mixing bowl. Sprinkle chili lime seasoning and mix well with tuna, breaking up into smaller pieces.
- Cut away thick stems of cilantro bunch, then finely chop; combine with chopped romaine.
- Prepare lime crema. Combine sour cream, lime juice, chili powder, paprika, chili lime seasoning, and salt in a small mixing bowl; stir to combine.
- Cut avocados in half and remove seed. Using a large spoon, scoop out flesh and cut into ½” slices. Dip slices in an acid, such as lemon juice, to prevent browning. Serve one slice as a garnish.
- To assemble tacos, place 2 oz. tuna onto center of each tortilla (#16 scoop/disher). Top each with a combination of 2 Tbsp. shredded romaine lettuce and cilantro and 2 Tbsp. diced tomato.
- Drizzle or serve in 1 oz. portion cups 1 Tbsp. of lime crema and optional slice of avocado. Serve immediately.
