Ingredients:

  • CHAR SIU TUNA
  • 1 43-ounce pouch StarKist® Chunk Light Tuna
  • 1-1/4 cups Kewpie mayo
  • 2/3 cup char siu sauce
  • 1 tablespoon sesame oil
  • 1-1/2 tablespoons rice wine vinegar
  • 1-1/2 cups scallions, sliced
  • SESAME-LIME SLAW
  • 6 quarts thinly sliced green cabbage
  • 1-1/2 cups Kewpie Deep Roasted Sesame Dressing
  • 1/3 cup fresh lime juice
  • 100 Lotus leaf buns
  • 2 cups char siu sauce
  • 1/2 cup toasted sesame seeds
  • 1 cup fried shallots

Directions:

  • FOR THE TUNA Drain excess liquid from tuna in a strainer for 5-10 minutes. While tuna is draining, in a bowl combine mayo, char siu sauce, sesame oil, and rice wine vinegar with a whisk until homogeneous. Toss tuna in sauce until thoroughly combined. Fold in scallions right before service.
  • FOR THE SESAME-LIME SLAW Combine sesame dressing and lime juice with a whisk. Toss cabbage in sesame lime dressing until thoroughly coated.
  • TO ASSEMBLE On a microwave-safe dish, place damp, NOT WET, double-layered paper towel on the bottom, followed by buns and a second layer of damp paper towel to cover. Microwave for 30 seconds for 12 buns. Work in batches and adjust timing as necessary for individual microwave power. Buns should come out hot and soft. Do not steam longer than necessary to prevent drying out. Gently peel apart individual buns, being careful not to tear the exterior. Then gently open buns to receive filling. Do NOT open buns all the way or they will crack and separate. Spoon tuna into the bun, making sure it is spread into the bottom as well as side to side. Top with a drizzle of char siu sauce from a squeeze bottle to coat the tuna. Layer on slaw, followed by sesame seeds and fried shallots.
