A Mediterranean chopped salad gets kicked up with Mike’s Hot Honey and Starkist Albacore Tuna! Mix Tuna, Mike’s Hot Honey Vinaigrette, Tomatoes, Cucumber, Olives, and Chickpeas for a new swicy version of a crowd favorite.
Ingredients:
- Dressing:
1 ¼ cup extra-virgin olive oil - ⅓ cup lemon juice
- ⅓ cup Mike’s Hot Honey
- ⅓ cup Dijon mustard
- ⅓ cup red wine vinegar
- 3 shallots, finely chopped
- 5 garlic cloves, finely chopped
- ⅓ cup dried oregano
- 1Tbsp sea salt
- Freshly ground black pepper
- Chopped Salad:
1 43 oz. Pouch - Albacore Chunk White Tuna in Water - 5 small heads iceberg lettuce, thinly sliced
- 5 heads radicchio, thinly sliced
- 2 medium red onions, thinly sliced
- 1 quart cherry tomatoes, halved or quartered
- 5 English cucumbers, diced
- 5 cups green olives, sliced or quartered
- 5 15.5 oz cans chickpeas, rinsed and drained
- Salt and pepper to taste
Directions:
- In a large bowl, whisk together the olive oil, lemon juice, Mike’s Hot Honey, mustard, vinegar, shallots, garlic, oregano, salt, and pepper. In a large bowl, combine the lettuce, radicchio, tomatoes, red onion, cucumber, olives and chickpeas. Flake the tuna over top and drizzle with the dressing, toss gently to combine. Season with salt and pepper, if needed, and toss again.
