Albacore Tuna Pesto Panini

Ingredients:

  • 1, (43 oz.) pouch StarKist® Albacore Tuna in Water
  • 28 thick slices Italian bread
  • 4 ½ Tbsp. extra virgin olive oil
  • 1 cup prepared pesto
  • 1 ¾ cup roasted red pepper strips
  • 28 fresh tomato slices
  • 28 slices provolone cheese

Directions:

  • Preheat sandwich grill or griddle.
  • Brush one side of each slice of bread with olive oil. Spread the opposite side of each piece of breads with ~ 1 Tbsp. pesto.
  • Top pesto with ~⅓ cup tuna, 2 Tbsp. red pepper strips, 2 tomato slices and 2 slices of cheese. Place second slice of bread on top of the cheese, with the olive oil brushed side on the outside.
  • Place sandwich on the sandwich grill or griddle and cook until the bread is browned on both sides and cheese is melted. If using a griddle, flip the sandwich once the one side is browned.
