Ingredients:

  • 6, (43 oz.) pouches StarKist® Chunk Light Tuna in Water
  • 20 cups whole grain panko breadcrumbs, divided
  • 6 ¼ cups shredded Swiss cheese
  • 6 cups Honey mustard dressing
  • ¾ cup Spicy brown mustard
  • 1 cup diced celery, ¼ diced
  • 1 cup diced white onion, ¼ dice
  • ½ cup smoked paprika
  • 3 cup chopped fresh parsley
  • 1 Hamburger bun
  • Cooking spray

Directions:

  • Preheat oven to 350°F. Spray 5 sheet pans with cooking spray.
  • Mix the tuna and 10 cups of breadcrumbs with the cheese, dressing, mustard, onion, celery, smoked paprika and parsley in a large bowl. Mix well.
  • Form into 100 large patties using a #8 scoop or ½ cup measuring cup. Place the remaining 10 cups of breadcrumbs on a sheet pan. Coat each side of the tuna patties with breadcrumbs and spray with a little cooking spray and place on prepared sheet pan.
  • Bake the patties in the middle of the preheated oven for 25 minutes until they are golden brown and cooked through (155°F on an instant-read thermometer).
