Ingredients:
- 1, (43 oz.) pouch StarKist® Chunk Light Tuna in Water
- 32, (2 oz.) flatbread, WGR
- 2.6 lb. fresh cucumber
- 1 qt. plain, low-fat Greek yogurt
- ¼ cup lemon juice
- 1 tsp. oil, extra virgin or blend
- 1 tsp. granulated garlic
- 1 tsp. black pepper
- 1 tsp. dill, dried
- ½ tsp. salt
- 1 qt. (38.4 oz.) hummus, original
- 1 qt. cucumbers, ¼" diced
- 1 qt. red bell pepper, ¼" diced
- 1 qt. carrots, shredded
Directions:
- To Prepare Tzatziki Sauce:
- Rinse and scrub cucumbers under running water. Optionally, remove half of the peels and seeds to lessen bitter flavors. Shred using a grater.
- Place shredded cucumber in a colander or perforated pan. Using gloved hands, gently press the cucumber to remove excess liquid.
- Place cucumber, yogurt, lemon juice, oil, garlic, black pepper, dill, and salt in a bowl or container. Stir until well combined. For best results, prepare one day in advance of service.

- Using freshly gloved hands, break the tuna into small pieces.
- Layer each ingredient in a 9 oz. cup in the following order:
- #30 hummus (1 oz. m/ma)
- #24 tuna
- #30 diced cucumbers
- #30 tzatziki
- #30 diced red bell pepper
- #30 shredded carrots
- Cut flatbreads in half diagonally and then each half in half one more time. Place flatbread triangles into paper pastry bag and into warmer 10 minutes prior to service.
