Ingredients:
- FOR THE SAUCE
- 3/4 cup parsley
- 3/4 cup cilantro
- 2 tablespoons mint
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground coriander
- 1/8 teaspoon cayenne
- 3/4 teaspoon smoked paprika
- 2 teaspoons preserved lemon (just the peel, rough dice)
- 2 tablespoons lemon juice
- 1/2 teaspoon cumin
- 6 tablespoons olive oil
- 1/2 teaspoon salt
- 2 teaspoons rice vinegar
- 1 43-ounce pouch StarKist® Albacore Tuna
- FOR THE ANCIENT GRAINS
- 28 cups Cooked Ancient Grains (Mix of quinoa & farro)
- 2/3 cup Ras Al Hanout
- 2 cups olive oil
- 1-3/4 cups garlic aioli
- 21 cups tomatoes, blistered
- 1 cup + 3 tablespoons crispy chickpeas, crushed
- 28 lemon wedges
- 1/2 cup fresh herbs
Directions:
- FOR THE SAUCE Blanch all herbs in simmering water for 30 seconds. Immediately shock in ice water. Once cool, remove excess moisture using a salad spinner. Add all ingredients, MINUS HERBS, to a blender and blitz to combine. Add herbs and pulse in the blender until herbs are finely chopped but do not puree. Only blend as long as necessary; excess blending will lead to damaged herbs and poor color.
- FOR THE CHERMOULA TUNA Add the tuna to a large bowl; top with the chermoula sauce and toss to combine.
- FOR THE ANCIENT GRAINS Heat ancient grains according to packaging. Combine olive oil and spices together until no more dry pockets remain; add the grains and toss to coat.
- TO ASSEMBLE In a shallow bowl place 1 cup of grains on the bottom. Add a drizzle of aioli, making sure to get good coverage over the grains. Top with the tuna followed by the blistered tomatoes and crispy chickpeas. Garnish with fresh herbs.
